Architecture is not an abstract detail with Dokku; it decides what is actually exposed when you use it. Reported vulnerabilities in a hosting & deployment product are not by themselves a warning sign, every widely used tool accumulates some over time, and finding none reported can mean the opposite of safety if there is nowhere for anyone to report one. What actually matters is whether Dokku makes disclosure possible at all: a published security contact, a documented process for reporting an issue, and a visible record of how past reports were handled. A vendor that acknowledges problems openly and fixes them on a reasonable timeline is telling you more about how the next one will go than a spotless-looking history with no disclosure channel behind it.
Audit History
Independent review is the difference between a security claim and a verified one. Check whether Dokku has published any third-party audit or assessment, when it was done, and crucially what scope it covered, an audit of one component is often quoted as though it covered the whole product.
